These homemade spinach pastry parcels are a labour of love but worth it! I mix the dough myself from a local mill and fill the parcels with my own mixture of fresh spinach, sumac, onions and top it off with a touch of lemon juice.

It is believed these “little hand pies” originated in Lebanon and were served at special occasions and large family gatherings.

What seems most likely is that they originated in Lebanon, where they are extremely popular still, and then spread around the Ottoman Empire, as it was known then including Turkey, Syria, Jordan, and Palestine.
