





Mudardara [MOO-DAR-DARA] - FAMILY SIZE
I have lived through 2 civil wars in Lebanon and in times of crisis we turned to easily accessible and affordable ingredients but of course we still made lovely food! Mudardara is a personal favourite from these tough times and this dish became a symbol of resilience and resourcefulness within our community made principally from lentils and rice topped with caramelised onions. Mudardara is my testament to our ancestors' determination and their ability to create delicious meals even in the harshest times.
Mudardara means “pockmarked” and refers to how the lentils look amongst the rice.
In Lebanese tradition we eat Mudardara with either a Fatoush salad or a Minted Cabbage Salad.
At Alissar’s Kitchen we serve Mudardara as a family sized portion for sharing
